Today I come to you with a deliciously refreshing recipe to satisfy your sweet tooth. Cheesecake is one of my favorite desserts and I have never really attempted to make it...until today!
It was my first time making it and I believe it came out pretty yummy (plus my roommates can vouch for it since they're my little guinea piglets).
Aside from cooking, I wanted to share with you all that I have started receiving my acceptance letters from law schools and I am so incredibly stoked to see what the future has in store for me!
Now, before I go off tangent and start to ramble...let us begin with the recipe!
Ingredients:
Cheesecake:
1 Pre-made graham cracker crust (yes, I was lazy and went and bought some from Ralph's)
2 packages of cream cheese
1 Tbsp sour cream
1/2 cup dark brown sugar (or your preferred sugar or Stevia would probably be about 1.5-2 TBSP)
1 tbsp vanilla extract
2 drops of orange extract
2 eggs
Chocolate Marble:
Choose your favorite chocolate(about half a cup once it is melted)
2-3 tbsp butter so the chocolate does not harden
Topping:
5 Tbsp sour cream
1 Tbsp dark brown sugar
3 drops orange extract
2 drops vanilla extract
Steps:
Start off by leaving the cream cheese outside so it comes out to room temperature (this will make it much easier to mix)
Pre-heat the oven to 350 Fahrenheit (177 C)
Mix cream cheese, sugar,sour cream and extracts together until you get a smooth consistency without cheese lumps.
Add in the eggs on by one. The addition of the egg yolk specifically will smoothen your batter up, egg whites are usually used to harden things (such as macarons or merengue)

Melt the chocolate and incorporate the butter until you get a smooth consistency
Add the chocolate to the top of the cream cheese and mix it around with a fork in swirly motions
Bake for 40 minutes
While the cheesecake is baking, go prepare the topping.
Mix all the ingredients together and place in the fridge while the cheesecake is baking
Once the 40 minutes have passed, cool the cheesecake for 5-10 minutes and the pour the topping on evenly.
Bake for another 10 minutes
When it is finished baking, let it cool out for about 20 minutes or until the pan is room temperature to touch.
Now you can decorate with your favorite fruit.
I used blueberries and some half sliced up strawberries to add a little kick to the cheesecake and added some mint for more freshness
Move to a fridge and let it chill for at least 3 hours
When the 3 hours have passed (let's be honest, I did not wait more than that, I was in need for some cheesecake!), run hot water over a knife and gently cut the perfect slice for your enjoyment.
