Eggs Benedict

Good afternoon everyone,


Today I will be sharing my eggs benedict recipe with you, which is pretty fast and absolutely delicious!
I had this recipe at a hotel restaurant in DTLA and I just loved the combination of smoked salmon and the hollandaise sauce. The hardest part would probably be making the hollandaise sauce because it takes a while. I cut down on the butter needed for the recipe because it's not extremely necessary.





So here we go :D


Ingredients:
1 Whole egg
4 asparagus pieces
1 Slice of tomato
Smoked Salmon
Whole Wheat English Muffin

Sauce:
1 egg yolk
1/3 cup of Butter
Juice from half a lemon
Salt/Pepper/Paprika

Boil some water in a pot and add a drop of white vinegar while it is boiling. Once the water is boiling, twirl a spoon to make the water move clockwise. Drop the egg in the little hurricane you just created :p
Lower the heat and poach the egg for 2 minutes. Turn the heat off and take the egg out and place it on a napkin in order to soak up the excess water.

On the side, prepare a steaming pot for the asparagus. I add some vegeta to the water because the steam add that little seasoned flavor into the asparagus. 


The hollandaise sauce:
Start off by preparing a bain-marie, by putting a pot on top of a pot with 1inch of boiling water.
Drop the yolk and whisk it, cooking it over the steam. Make sure the water form the bottom pot does not touch the top pot. Slowly add the melted 1/3 cup of butter and whisk constantly over medium heat.

Add the lemon juice and whisk. Add pepper/salt and paprika for flavoring.
If the sauce is too thick, add 1/2 teaspoon of cold water and whisk until the sauce is liquid.

Set up your plate with the muffin, tomato, asparagus, smoked salmon, the poached egg and pour the sauce on top of it all. I like a lot of the sauce cause I'm a lover of sauces. Especially when you cut the egg and all that delicious yolk is oozing out all over the muffin, it's delicious!!!
